How to work with that surface ?
First you have to Apply some corn flour on the dough for non stick stamps.
Now just press down the letter you choose on the surface of the dough.
Start with one of the middle letter of the line you wish to write and continu to the sides letters. Now you can leave it like that or add some ink on it.
